The Future of Hotel Food & Beverage Operations

The combined effects of rising labor costs, nationally-focused union bargaining strategies, heightened restrictions on subcontracting and expanded successorship obligations have had a dramatic impact on hotels' food and beverage department operations throughout the country. The new collective bargaining agreements implemented in major markets in 2013 have also limited, and in some cases eliminated, hotels' ability to allow outside restaurants to operate in their facilities. This session will address the future of hotel F&B/restaurant operations in light of all these changes, with an emphasis on analyzing successful operational and contract bargaining strategies from various markets.
